Glass Noodle Salad with Tatsoi

Tatsoi has a subtle nutty flavour. Similar to Pak Choi, it goes very well with Asian dishes - just like this glass noodle salad. The slightly spicy salad is rounded off by the Tatsoi and becomes really fresh. It's also an easy and super quick recipe.

Ingredients

  • 100 g glass noodles
  • 1 Seedbar Tatsoi
  • 1 small carrot
  • 1 small spring onion

For the dressing:

  • 1 lime, juice of it
  • 1 small chilli
  • 1 clove of garlic
  • 1 small piece of ginger (ca. 1 cm)
  • 2 tbsp vegetable oil (or peanut oil)
  • 3 tbsp soy sauce
  • Some salt & pepper
  • Honey or agave syrup

Step 1

Prepare the glass noodles according to the package instructions. In most cases, they only need to stand in the boiling water for about 5 minutes.

Step 2

Peel the carrot and cut into fine strips. Cut the spring onion into thin rings. Harvest the Tatsoi and place in a large bowl with the carrot, spring onion and slightly cooled glass noodles.

Step 3

For the dressing, finely chop the chilli, garlic and ginger. Squeeze the lime.

Step 4

Mix the soy sauce well with the lime juice, honey or agave syrup, oil, chilli, ginger and garlic. Flavour with salt and pepper to taste and pour over the salad. Mix well and enjoy. If you like, you can add a few peanuts or cashews on top.
